6 Quick and Healthy Work Week Lunches

When it comes to food, making healthy decisions when you are busy, on-the-go, and hungry is never easy. As a health professional I have made it my goal to share ideas that make living this nutritious lifestyle as enjoyable and effortless as possible . Take a look at some of these simple, quick, and easy work week lunches that will not only leave you with lasting energy, but will save you a boat load of calories!

SALAD IN A JAR

Simply choose your most favorite fruits and veggies, favorite type of protein, and most desired type of lettuce and greens. Make sure to put the dressing in first and seal the lid extra tight to keep everything as fresh as possible. When you are ready to eat simply shake and open. You can even prepare jars for the week and they will stay fresh right inside your refrigerator.

 

 Open-Faced Bell Pepper Sandwich

Screen Shot 2014-07-14 at 11.33.41 AMIf you are trying to watch your carbohydrates or even calories, this is a perfect  healthy, tasty alternative to a sandwich.  Simply cut a bell pepper down the center, fill with your favorite kind of deli meat and top it with your normal veggie toppings. I recommend adding 1/4-1/2 of an avocado to make it more satiating.

 

 

 Quinoa Salad With Feta and Cherries

Ingredients:

-1/2c of cooked quinoa

-3 tbsp of red wine vinegar

-1/4C of fresh or dried cherries

-3 tbsp of feta cheese

-3 tbsp of toasted almonds

-1 tbsp of chopped parsley

Avocado Stuffed Apple-Chicken Salad

Ingredients:

-3 stalks of celery

-2.5 cups of shredded or chopped chicken

-1/2 cup of non-fat plain greek yogurt

-1 tbsp of olive oil

-1 cup of chopped apple (any kind)

-2 tsp of fresh squeezed lemon juice

-1-2 chopped green onion (optional)

-salt and pepper to taste

Crockpot Chicken Fajitas

Screen Shot 2014-07-15 at 9.01.12 AMThis slow cooker recipe can be so diverse it is the perfect, easy meal prep for a busy work week. You can eat in by itself, on a salad, or in a wrap. Easy to bring to work and heat up or even eat cold.

Ingredients:

-1lb chicken breasts

-3 peppers (green, red, and yellow) sliced

-1 onion sliced

-2 tbsp of minced garlic

-1 can of crushed tomatoes or crush your own!

-1 packet of fajita mix (or use your own spices)

Pour all ingredients in the crockpot and cook for several hours until chicken is fully done.

Turkey Sandwich On Ezekial Bread

Wheat includes gluten which turns to a gel like substance when digested. You can find Ezekial bread in the refrigerated or frozen section of most grocery stores. Also, when choosing your deli meat opt for a brand like Boar’s head that is not processed with chemicals and preservatives. Make sure to fill your sandwich with fresh veggies and this makes for a quick, filling lunch at work!
